I was wondering if there is any plan to separate or space out the Save and Save As options in the File menu on Photoshop a bit more, because it's too easy to slip and hit Save and overwrite work you have spent hours on.

I always use the keyboard shortcuts, and your issue appears to be the best reason to memorize those. But I sympathize. There are other circumstances when I've slipped and clicked on the wrong menu item.
For those of us who use belt and suspenders—if I have a layered file I need to protect from change, but I'm going to use it as the starting point for a variation, my first step will be to perform that Save As and give it a new name. As you point out, it can be easy to slip up, even with kbsc, when you didn't mean to overwrite your file on disk.
