Photoshop: What version would run on my Apple iMac 2006, Snow Leopard 2GHz Dual Core?

That depends entirely on what you want to do, and what level of experience you have with image editing.

I'm now starting out in photography so I need something to edit my images.

Snow Leopard is pretty old. Apple no longer supports it and we no longer create software to run it.
