Photoshop 2020: Crashes and corrupts files during the saving process (macOS 10.15 Catalina)

I am using Mac OS Catalina and the latest version of Photoshop (21.0.3).
For 2 weeks now photoshop started crashing during the saving process - but not just does it not save the projects - it totally corrupts the files - they can not be reopened. (It seems to me, that it also crashes the finder during that saving process)
It happens with light simple files with 5 layers as well as with complex large files.

I am absolutely desperate. I deinstalled / reinstalled PS 5 times now.
I have to work and it is not possible any more.
I has been month since Catalina was release and there is other applications the Adobe's that require a new operation system ...

I am very grateful if anyone can help me! Thanks for reading!

Sorry to hear about your troubles.  Can you try enabling Preferences -> Performance -> Legacy Compositing?  Please let us know if that helps.

Are you saving to an external drive? If so, is that driver formatted for ExFat?

Thank you, Andrew, I will try that.
@jeffey - I tried all different kind of drives (internal - APFS, external - Mac OS journaled, ...) Yesterday I formatted a 132GB-USB with APFS and tried with that - and it worked for an hour. But I did not have time to work on the large projects yesterday.
Thank you both for replying. I will enable the Legacy Compositing and try ...
