Lightroom Classic: Does upgrading from Lightroom 5 retain edits, ratings ,and most importantly colour labels?

MERGE LIGHTROOM 5 to CLASSIC CC - I think it's time but must know if the merge retains edits, ratings, and most importantly colour labels?

Photographer / Graphic Designer.
Creative but not super-tech.
I am currently running macOS Sierra 10.12.6.
I work/edit predominantly on desktop/laptop. 
I store using a complete NAS storage system.

When you install and run LR Classic, it will ask to upgrade your LR 5 catalog. The upgrade process makes a copy of the old catalog, and that copy will retain all of your metadata, including edits, ratings, color labels, captions, GPS locations, etc.

Lightroom Classic 9.2 (latest) isn’t supported on Sierra

Do you mean merge or upgrade?  Some time ago I upgraded from LR 6 to CC and although I can't speak to ratings (I don't use them) I can say it retains everything else, including color labels, which I use quite a bit.

If you're talking about merging a catalog from another computer, I've merged a 9.2 catalog from the laptop I take on site, to a 9.2 catalog on my home workstation, and it retained all settings.

Lightroom 5 - Classic retains all edits, labels, etc. It is just a newer version of the same software. You are confusing Classic with Lightroom Desktop.
