After making a selection and then going to Image adjust - Curves, the eye dropper appears and the program freezes. Requires force quit and causes loss of work.

I was having this problem 2-3 years ago, then it seemed to resolve itself, but now I have had a similar problem where Photoshop freezes when using the curve menu on an alpha channel, just that the cursor isn't changing to a eye dropper. It is still infuriating.
Last time I concluded it was related to my Wacom tablet, are you using one?
Have you resolved the issue since?

In addition to John's great questions Greg, curious which version of Photoshop are you working with and which Operating System you're using?

At the time of the issue I was on the latest versions of Photoshop and OS X (and I still am).

Just as an update, I have been using cc20105.5, with Mac OS X El Capitan, 10.11.3.
In trying to resolve this issue I upgraded to the latest PS, 2017 which resulted in me not being able to open any image files at all! I tried many different ways and file types, it was completely unresponsive.
I had to revert back to 2015.5, (re-install), but was back to the same problem of freezing. That said it appears to affect just certain files so I have managed a work round to get my work done. The worst thing is that I never know when it will strike next only that it happens only when choosing curves on a alpha channel.

I am running the latest version of everything (PS and OS X) and attempted the same action a few days ago that had previously crashed the program - and now it doesn't crash. It seems the problem is resolved. I have a 2015 MacBook Pro. What kind of machine are you on?
