I agree something does appear to be wrong with entering that symbol into the watermark editor area.

As a work-around, you should be able to create the symbol, via Alt-0169 or other method, in another text editor or word-processor and then copy-paste it into LR's watermark editor. I tried this with WordPad just now and it worked ok on Windows 7.

Assuming you are using the Watermark Editor?

Alt + 0169 must be entered from a 10-key pad and not the numbers above the alphabet. It is working fine for me right now. I just tested in LR 5.6

In a pinch you can also use the built-in Windows utility Charmap to select and copy non-keyboard symbols for pasting into documents.

Also-make sure the font you've chose has the character contained in the glyph set. If it is missing, you can Alt 0169 till the cows come home and get nothing.
