Video explaining issue here: https://www.loom.com/share/1947599cd1534f48b76048b6ff3fcee9

Text version: I edited a shoot and 90% are a colour camera profile and the rest use a mono camera profile. When I got to the end of the shoot I decided I wanted all the colour images to be a bit more vibrant so I selected 'All' and adjusted Vibrance while a colour image was selected. This changed all the mono images to Adobe Color and adjusted their vibrance accordingly.

Why?

My assumption, which to me feels intuitive, is that the images using a mono profile would not be affected by this adjustment, only the images using a colour profile.

Why does LR decide it knows better and switch all those mono profiled images to the Adobe Color profile?

Probably because adjusting the vibrance means adjusting the color saturation, so Lightroom concludes you want color.
