The latest version of Lightroom Classic often (if not always) crashes when I am editing the keywords related to a photo.

Marco,

I do not find any crash reports under your email address with which you've registered on this forum. Do you submit the reports under a different email perhaps?
Is the crash dialog you receive an Apple dialog or an Adobe dialog?

Just to better specify the problem, when I edit the keywords box related to an image, after some editing (it may happen after some edits) Lightroom suddenly crashes. If I perform other activities, nothing wrong happens

Given that:

Sometimes weird behavior is corrected/cured by resetting the preferences.

Reset Procedure:1. Close Lightroom.
2. Hold down [Alt/Opt]+[Shift] while restarting Lightroom.
3. Overwrite the Preferences when prompted by the dialog.
4. Close Lightroom.
5. Restart Lightroom.Does the behavior continue after resetting the preferences?

I will refer you to your OS manufacturer since the crash is on the OS level. It might be helpful to hear what they say about this particular crash.

Macro, before running LR, start the Activity Monitor and click on the Memory tab.  Arrange your windows so you can see both the Activity Monitor and Lightroom.  As you edit keywords, what is the memory usage of LR right before it crashes?

Memory usage is normal, without strange variations, around 2-2,5 GB

OK. I asked because the crash log shows the program trying to allocate memory when it crashed.
