Since the upgrade to the latest LR CC (2015.8), it wants to export my whole last import. I want only one pic to be exported at a time, what do I need to do to stop this? Especially as it starts exporting from the beginning and I am not aware that I created any collection or something that creates such an export

Which operating system are you using? Ideally, only the selected images should get exported when you click Export.

If LR is exporting all of the most recently, last, LR speak "Previous Import", imported images then you have all of those images selected. LR does not arbitrarily export any image that you haven't specifically selected.
Also in the Export dialog window, near the top left side (Just above the "Export Location" section and just below the "Export To:" drop down), it states exactly how many images it will export. Whether it is one image or Thousands.
So I suggest you start reading that export dialog and make sure only the images you specifically want to export are selected.

Reset your preference file and see if that cures it.
Close Lightroom. Hold down [Alt/Opt]+[Shift] and launch Lightroom. Overwrite the preferences when prompted. Restart your computer.

Does the problem still occur?
