I'm applying a gradient mask in PS5. Typically I can click and re-click to redirect the gradient path, but no every time I click it keeps the old gradient and continues to add paths each time I click. Any ideas?

First, check the options bar for the gradient tool: did you change the blend mode, or transparency settings?

Yep, checked those. Blend mode is normal and transparency is on

Since the normal operation of the gradient tool is to draw over whatever is already there -- you may need to show us what you're referring to. Could be the gradient style, or the gradient preset being used (having transparency), or something else. But I'm not sure exactly what you're seeing, or how it's going wrong.

in the gradient editor you're likely in the second preset: foreground to transparent.

You want the first or a latter preset which has two defined colors, not transparency.
