Figuring our our version so we can use this

We have conflicting information on what Adobe version we have.  How do we find this out? We paid for Adobe but do not seem to have access to it.

'Adobe' is the name of the company, not the product. So what product(s) did you pay for? Photoshop? Lightroom? The entire Creative Cloud suite? And what system are you using? Macintosh? Windows?

Assuming you're referring to Photoshop and Lightroom (Classic or the all-new CC) you can access the version # within desktop applications. Launch your application and go to Help > System Info...
