Would it be possible to hide artboards (let's say the ones I don't currently work on; or manually selected) to boost photoshop performance?

Yes. Turn off the layer visibility (eyeball icon) in the layers panel for any artboard you want to hide/show. Not sure if it would boost performance a lot, but I expect it would.

Photoshop is good at that. It makes me feel stupid daily...

Oh, pro tip for managing all those artboards!
Ctrl(cmd)-click on the expand-arrow on one of the artboard layers to expand or collapse ALL the artboards at once.
