Legacy Profiles converted to black and white.

All the of the profiles under my 'Legacy' tab are being auto converted to black and white. I've dug around and have seen videos of folks accessing older adobe color profiles and theirs don't appear this way. How can I correct this issue?

Look in the Profiles group instead of the Legacy one for the color versions.

I did see that. What are these other b&w versions that are being created? And why my native camera profiles?

It's essentially a UI workaround for legacy images. In the past, any color profile could be converted to B&W, whereas in the new profile system, you have to choose a color profile or a B&W profile. For example, in the past, you might have selected Camera Provia/Standard and switched it to B&W. In the new UI, Camera Provia/Standard is a color profile, and simply converting to B&W would assign the Adobe Monochrome profile, which would give a different effect. If you wanted to replicate the effect you used in older versions, you'd need to select the B&W version of the Camera Provia/Standard profile.
